WHAT IS NI MAI?
Ni Mai knife cladding involves a meticulous process in Japanese knife making where two distinct types of steel are layered together to form the blade. The inner core, known as hagane, is typically a harder steel that holds a sharp edge well. This harder steel provides the blade with its cutting ability and edge retention. Surrounding this core is a softer steel layer called jigane, which acts as a protective casing. The jigane enhances the blade's durability and flexibility, reducing the risk of the harder core becoming brittle or prone to chipping.
The cladding not only serves functional purposes but also contributes to the aesthetics of the knife. Some craftsmen utilize different types of steel for the cladding to create visually striking patterns such as Damascus or Suminagashi, achieved through various forging and layering techniques. These patterns not only make the knife visually appealing but also showcase the skill and artistry of the knife maker.
Additionally, the softer outer layer provides some resistance against rust and corrosion, further prolonging the life of the blade. This combination of hard and soft steel layers is a hallmark of traditional Japanese knife making, resulting in blades that are not only sharp and durable but also beautifully crafted.
After care: High Carbon steel
Clean with warm soapy water and a soft sponge.
Do not use abrasives, harsh chemicals, soak in the sink or place in dishwasher.
Dry immediately
Pay special attention to the areas near the handle and the cutting edge
Application of a thin coat of food safe mineral oil is recommended, cooking oil is ok.
Store in a dry place
Use your high carbon steel blade for its intended purposes and avoid tasks that may cause excessive stress or damage to the blade.
Avoid twisting or prying, and never use the blade as a screwdriver or can opener.
