The Gyuto (Japanese, literally 'Beef Sword') is a post-WW2 design seen in response to the introduction of western cuisine to Japan. It is a professional chefs knife that can be used for mincing, slicing, and chopping vegetables, slicing meat, and disjointing large cuts.
